Ingredients
- 585g ripe banana, mashed
- 175ml rapeseed oil
- 5 large free-range eggs
- 300g Muscovado sugar
- 10ml vanilla extract
- 340g plain flour
- 2 ½ teaspoons baking powder
- 2 teaspoons mixed spice
- 1 banana, cut in half lengthways for decoration

Method

1Preheat the oven to 180°C/gas mark 6. Lightly grease a Le Creuset 30cm Loaf Tin.

2Place the mashed banana in a large bowl along with the canola oil, eggs, sugar, and vanilla extract, and beat until combined. Add the flour, baking powder, and mixed spice and mix until just combined.

3Pour the mixture into the prepared baking tin, and place the extra sliced banana cut side up on the top of the cake. Bake for 1 hour 5 minutes or until a skewer comes out clean.
