  • 800g Chicken drumsticks and thighs
  • 1 tbsp all purpose seasoning
  • 1 tbsp chicken seasoning
  • 1 tsp browning
  • 1 tsp pimento
  • 5 garlic cloves
  • 2 spring onions
  • 1 green bell pepper
  • 1 onion
  • Handful fresh thyme
  • 1 scotch bonnet
  • 1 tbsp tomato ketchup

    Season your chicken pieces with all purpose seasoning, chicken seasoning, browning, pimento, minced garlic, diced spring onions, a sliced bell pepper and onion. Leave to marinate overnight, or for at least 30 minutes. Grind your spices in a pestle and mortar if necessary.

    Sear your chicken on both sides, until golden brown. Cook in batches, avoid overcrowding the pan.

    Add all your vegetables from the marinade into the pan. As well as thyme and a scotch bonnet. Cook on low for 15 minutes, with a lid on to allow the chicken and vegetables to steam.

    Cover your chicken with boiling water or chicken stock, add a tablespoon of ketchup. Cover, cook on low for an hour or until the chicken is fall off the bone tender.

    Season to taste.
